Ukraine Gate- Kyiv – April 21, 2022- Easter dessert is a traditional dish of the holiday holiday even during the war, Ukrainians cook this cake at home, because it is impossible to imagine Easter without it.
How Easter cheese is prepared and what pastries for Easter, apart from cakes, can be on the festive table.
Traditional Easter cake with yeast
- Flour – 1 kg.
- Eggs – 5 grains.
- Milk – 500 ml
- Raisins – 250 g.
- butter – 200 g.
- Sugar – 300 gm
- dry yeast – 12 g.
- Vanilla – 1 teaspoon
- Salt – 0.25 tsp
To decorate:
- egg white – 1 pc.
- Citric acid – 0.5 tsp
- powdered sugar – 120 g.
Remove the eggs and butter from the refrigerator and leave until they reach room temperature, heat half the milk to about 40 degrees, mix half the flour with the yeast, pour the warm milk and leave the dough in a warm place for 30 minutes.
Then beat the eggs with sugar and vanilla until it becomes a light fluffy mass, stir the beaten eggs with the mixture, mix the salt and butter in the dough with your hands, sift the second half of the flour and knead the homogeneous dough, leave it in a warm place for an hour until it doubles in size.
Soak the raisins in hot water for 15 minutes until they swell, dry the raisins from the water and put them in the flour, stir the raisins with the already risen dough and leave for another 10 minutes, grease a baking tray with oil and fill it 1/3 with the mixture, then bake for an hour at 180 degrees.
Easter recipe without yeast
- flour – 350 g.
- Milk kefir or curd – 300 ml.
- butter – 100 g.
- Soda – 1 teaspoon (or 4 tablespoons of baking powder).
- Raisins – 100 g.
- The flavor of one lemon.
To decorate:
- powdered sugar – 100 g.
- Butter – 2 tbsp.
- Lemon juice – 3 tablespoons
Rinse, dry and sprinkle raisins with flour, sift flour, mix flour with soda, melt butter, add sugar, lemon peel and vanilla sugar to taste, pour kefir with soda into the oil mixture and mix, pour flour, add raisins and knead the dough.
Grease the baking molds with oil and fill two thirds of them. The cake is ready to cool slightly and remove from the molds. To decorate:
Melt the butter, add the powdered sugar and lemon juice, stir with a spoon until the decorating cream thickens, and immediately distribute it on the cake.
