Rice is one of the most popular cereals, which is at home for almost everyone. However, even such an understandable product can bring both benefits and harms to the body – depending on the method of preparation. Let’s start with the fact that white rice is not on the list of healthy foods at all: it contains a large number of carbohydrates, starch, and has almost no benefits for the body.

But, brown rice is a real source of vitamins and minerals. Because it is processing (which is almost absent) does not destroy the grain shell, brown rice is rich in fiber. In addition, the active substances in rice strengthen hair, give them strength and shine.
For all its abundance of beneficial properties, rice has one drawback – high starch content, which can cause blood glucose spikes and weight gain. To prevent this, after cooking it is important to allow the rice to cool completely (it is better to even cook it in the evening and keep it overnight in the refrigerator).
Cereals contain the so-called “stable” starch, which finally acquires its “stability” after complete cooling. Simply put, in the process of heat treatment (cooking or stewing), the starch contained in the rice changes its structure. After complete cooling, the starch becomes “stable”, it acquires the ability to reach the large intestine without being completely dissolved in gastric juice.
“Stable” starch serves as a prebiotic – it feeds the beneficial bacteria of your gut microbiome, providing them with a favorable environment for existence. As a result, we get blood sugar control, clean skin, hunger control, and a sharp reduction in the risk of overeating.
