Secrets of proper preparation for baking
A chicken is considered ideal if it is completely baked but not burnt. At the same time, it should be juicy and have a golden appetizing and crispy crust.
World-renowned chefs advise:
for this it is best to take not a frozen product, but fresh chicken (can be chilled);
baking utensils suitable thick-walled: cast iron, duckweed, ceramic form with high sides. Only they keep the high temperature for a long time and heat up evenly. In ordinary glass and metal molds, the product may burn;
it is desirable to get the chicken out of the refrigerator beforehand so that it has room temperature. Then the calcination will be uniform.
Secrets of juicy breast
It is easy to overdry chicken, and this should not be allowed. Chicken breast is a dietary part that contains almost no fat. Many European chefs use a tricky trick – pre-soaking in brine. To do this, dissolve a quarter cup of salt in 1 liter of water. If desired, you can add half a cup of sugar. The brine should be made so that the chicken is completely immersed in it. The actual soaking should last at least 30 minutes, but not more than eight hours.
Before cooking, the chicken carcass should be washed and wiped dry.
To give juiciness still use some techniques during baking:
the breast area should be covered with foil, which must be removed at the end of cooking (10 or 15 minutes before the end);
during baking, you can put on a lump a plate of bacon or lard. They will add more juiciness;
often chefs use the old, proven way – under the skin in the area of the breast put pieces of butter.
Secrets of crispy crust
If the oven has a special grill device, experienced cooks advise to activate it 15 minutes before the end of cooking. If you do not have it, you can coat the chicken before baking with a mixture of melted honey with mustard or soy sauce. You can just cover with a thin layer of sour cream (but not mayonnaise).
To evenly cover the crispy crust, Spanish culinary maestro Martin Berasatega recommends turning the chicken periodically (every 15 minutes).
Important aspects of cooking the perfect chicken
The oven must be well preheated for perfect baking. The optimum temperature at the beginning of the process is about 220 degrees Celsius. Then the temperature can be gradually reduced to 200-180 degrees Celsius.
Periodically, the prepared product should be watered with the juice released during baking, or broth.
Smokers need a “rest” before serving. This means that you need to get it and let it stand for a while undivided. Then it will completely absorb the juice and aromas of spices.
