Like satay, Japanese kebabs used to be often sold by street vendors because they were prepared almost instantly. This is an ideal dish for a light impromptu barbecue because the sauce can be prepared in advance, and the meat does not need to be marinated for a long time.

Ingredients:
6 boneless chicken thighs
1 bunch of green onions
Yakitori sauce
Ingredients:
1 cl. Japanese soy sauce
½ cl. sugar
2 st. l. sake or dry white wine
1 st. l. wheat flour
In a small saucepan, mix soy sauce, flour, sugar, and sake or wine. Stirring, bring to a boil, then cook on low heat for 10 minutes or until the sauce evaporates by a third. Cut chicken thighs into small pieces, green onions with feathers 3 cm long. Soak chicken pieces in sauce and string on skewers, alternating with onions. Fry the kebabs, lubricating several times with the sauce, no more than 10 minutes so that the chicken is fried but not dried.
