Traditionally, Asado – and it can be any meat and even sausage – is not marinated, but chimichurri sauce is an exception. In it, steaks both soak and with it serve to a table.

There is no one right recipe for chimichurri: both ingredients and proportions Argentines use depending on personal taste.
Ingredients:
4 beef steaks with bones, about 0.5 kg and at least 2.5 cm thick
Chimichurri sauce
Ingredients:
2 skl. fresh parsley and/or cilantro
1/4 skl. fresh oregano leaves
3-10 cloves of garlic
2 st. l. chopped onions
1/2 cl. olive oil
1/4 skl. red wine vinegar
2-3 tbsp. l. lime juice
salt and red pepper to taste
Mix all the ingredients for the sauce in a blender at medium speed so that you can feel the pieces of garlic. It should turn out about 2 glasses.
Divide the sauce into two parts: use one for the marinade, leave the other for serving. Dip steaks in marinade for half an hour, then grill over medium heat until cooked through.
Argentines themselves prefer medium-fried steaks and cook them for no longer than 10 minutes on each side.
Let the finished steaks stand for a quarter of an hour, if necessary, cut across the fibers, and serve with chimichurri sauce.
