Hinkali is a type of pelmeni that is often stuffed with minced meat. To prevent them from having a pronounced taste of lamb, chicken fillet and spices are added to the stuffing. Thanks to the atypical filling, the dish becomes very tasty.

Ingredients:
For the dough:
flour – 480 g;
water – 200 ml;
starch – 120 g;
salt – 8 g
For minced meat:
lamb pulp – 450 g;
chicken fillet – 130 g;
onion – 250 g;
butter – 32 g;
greens – 3 g;
spices – 15 g
For filing
cream – 40 g.
Preparation:
To prepare the dough we will need to mix flour, salt, starch, and water. After that, you need to mix everything well.
For minced meat on a fine grinder grind lamb, chicken and onions. Add butter to the stuffing, pour 150 ml of cold water, salt, and pepper.
Cut the dough into pieces weighing 30 g and roll out the cakes.
Put 60 g of minced meat inside the cakes and twist the khinkali.
Put boiling khinkali in boiling salted water and cook for 12 minutes. Serve with sour cream.
