From plums you can cook not only jams and marmalades – they can be the basis for the sauce.

Plum sauce is a great addition to fried meat or cheese, a great marinade for poultry. With a few jars of this sauce in stock, you will save yourself from having to run to the store and buy questionable quality ketchup.
The technology of making the sauce is quite simple, but the result is truly amazing. The rich bouquet of spices used in the recipe gives the plum sauce a delicate aroma and spicy taste.
Ingredients:
1 kg of plums
1 pod of chili pepper
5 cloves of garlic
0.5 cups of water
2 tablespoons sugar
1 tablespoon salt
2 teaspoons ground coriander
1 teaspoon ground cinnamon
1 teaspoon ground ginger
2 bay leaves
2 boxes of cardamom
4 peas of allspice
4 black pepper peas
4 carnation buttons
Preparation:
Wash plums, pit them, fill with water, bring to a boil and cook under the lid until soft, which should take no more than 10 minutes.
Puree hot plums in a blender, boil, stirring constantly, on low heat for 15 minutes, add the garlic passed through a press and chopped chili peppers, and cook for another 10 minutes. Then add all the spices and seasonings and boil for 15 minutes.
Strain the prepared plum sauce, boil it again, pour it into sterilized jars closed with sterile lids, turn the jars upside down, wrap and leave to cool completely.

The approximate yield of the sauce from the specified portion is 600-700 ml.
Plums for sauce, it is preferable to choose sour varieties or use plums.
Depending on the variety of plums, adjust the amount of sugar. If the plums are sweet, the sauce can be acidified with citric acid or vinegar.
Adjust the sharpness of the sauce to your taste with the amount of garlic and chili pepper.
