The liver is one of the most useful products. It contains a huge amount of nutrients and minerals for our body. From it, in particular, you can make very tasty cutlets.
Tender and hearty liver cutlets easily diversify the diet when the usual cutlets, chicken legs and steaks are already tired.
These cutlets can be served with almost any side dish of your choice: they will taste good with mashed potatoes, porridge or pasta for lunch or dinner. And you can – as a snack with bread and your favorite sauce.
Chicken liver cutlets
Chicken liver – 500 g
Potatoes (boiled in uniforms) – 2 pcs.
Carrots (boiled) – 4 pcs.
Onions – 1 pc.
Chicken egg – 1 pc.
Flour – 2-3 tbsp. l.
Spices
Chop chicken liver in a meat grinder. Cut the onion into small slices, also chop with a meat grinder.
Also grind pre-boiled carrots. Twist boiled potatoes into minced meat. All of the above should be mixed well. Add salt and spices.
Add the minced egg. Add flour. If you add more potatoes, you do not need flour.
Stir the minced meat well again and fry the cutlets in oil, pouring each portion with a spoon, as the minced meat is semi-liquid. It is good to fry cutlets so that the meat does not remain raw inside.
Beef liver cutlets
Beef liver – 500 g
Rice – 100 g
Wheat flour – 200 g
Spices (salt, ground black pepper) – to taste
Vegetable oil (for frying)
Garlic – 5-6 cloves
Carrots – 1 pc.
Onions – 1 pc.
Boil rice until cooked.
Pass through a meat grinder (blender) liver, onions, carrots and garlic. Add boiled rice to the stuffing. Add salt and pepper.

Add flour. The stuffing should turn out thicker – thicker than pancakes.
Fry the cutlets in oil. Spread on a frying pan with a tablespoon. Fry the liver cutlets on both sides.
Pork liver cutlets
Pork liver – 500 g
Fresh lard – 150-200 g
Flour – 3 tbsp. l.
Chicken egg – 1 pc.
Salt, ground black pepper – to taste
Onions (large) – 1 pc.
Dried garlic – 1 tsp.
Frying oil
Cut pork liver into pieces and soak it for 2 hours in slightly salted water. Then dry the liver with a paper towel.
Peeled onions cut into 4-6 pieces. Cut the lard into pieces.
Twist the liver together with the lard and onion in a meat grinder.
Add raw egg, salt minced meat and pepper. Mix everything thoroughly, add dried garlic and add flour.
Stir the minced meat thoroughly again. The dough for liver cutlets will be quite thick.
Heat the oil in a frying pan, spoon the minced liver. Fry over medium heat until ruddy crust on both sides. It is important not to overcook.
Put the cutlets in a saucepan, bring them to readiness in the microwave at maximum power for 3-4 minutes or in a preheated oven to 180 ° C for 7-10 minutes.
Ready liver cutlets serve hot.
