From this vegetable, you can make a delicious roll without flour. Eggs and cheese, which melts during baking, form a thin layer of the future roll.
Ingredients:
For the roll:
500 g of zucchini
4 eggs
100 g of mozzarella cheese
a bunch of dills
salt
pepper
For the filling:
300 g of sausage
200 g of cream cheese
Step by step preparation:
1. Rub the zucchini on a large grater, add a pinch of salt and leave for 5 minutes to let the juice. The excess liquid is then squeezed out and drained. It is best to remove seeds and thick skin from a large zucchini.
2. In a separate bowl, beat the eggs, add pepper and mix well. Add grated cheese and finely chopped dill. Here we send the squeezed zucchini and mix well.
3. On a parchment-covered baking sheet spread a thin layer of vegetable mass. Bake for 20-30 minutes at a temperature of 180 ° C. Cooking time depends on the thickness and size of the layer.
4. Leave the finished roll to cool for 10-15 minutes, then spread the filling. Grease the finished layer with cream cheese and spread it on top of a slice of sausage. Then begin to gently twist the roll. Put it in the refrigerator for at least 1 hour so that the mass stabilizes and the roll is easy to cut.
As a filling, you can use ready-made minced meat, vegetables, mushrooms. Different cheeses are also suitable for making zucchini rolls. If you use creamy or soft cheeses like ricotta, then the roll should be sent to a cool place to harden. If you decide to cook a zucchini roll with semi-hard cheeses like Cheddar, then the formed roll should be sent for 10-15 minutes in the oven to melt the filling.
