In summer we baked pancakes with zucchini, cabbage, apples. Now it’s time to use a pumpkin that is useful in all senses.

Ingredients:
400 g of pumpkin
200-250 g of flour
1 cup yogurt
2 eggs
50 g of sugar
1 teaspoon soda
oil
Preparation:
Beat eggs lightly with sugar, pour in kefir, mix, add the grated pumpkin on a medium grater and mix again.
Pour soda into the prepared mixture and stir well so that it is extinguished in an acidic kefir medium. Then add the sifted flour, mix thoroughly and leave the dough for 10 minutes in a warm place.
Fry the oil in a frying pan, spread the dough in it with a tablespoon, and fry the pancakes over medium heat on both sides until golden brown.
On a side note:
Serve pancakes with sour cream, honey, condensed milk, jam, or fresh berry sauce.
Kefir can be replaced with natural yogurt, sour milk, or any other fermented milk product.
If you want to enrich the taste of pancakes, flavor the dough with vanilla, cinnamon, ginger, lemon, or orange peel.
You can add raisins, dried cranberries, dried apricots, or candied fruit to the pancake batter.
You will get a completely new taste if you do not use sugar, but lightly salt the dough and add dried garlic, oregano, thyme, or other favorite seasonings.
