Satsivi is translated from Georgian as “cold dish”. This is called the sauce and ready-made meat snack. Traditionally, satsivi is made from turkey, and chicken, beef, and even fish are also used for it.

Nut sauce, which is impregnated with meat, is called bazhe. In addition to walnuts, it includes many spices: basil, coriander, marjoram, dill, red pepper, Imereti saffron. This whole set can be replaced with fragrant Georgian seasoning hops-suneli, which already includes the above spices. You will also need wine or apple cider vinegar, which can also be replaced with fresh pomegranate juice. If desired, fresh cilantro is added to the satsivi, but the recipes differ.
Ingredients:
For the broth:
1 kg of chicken legs or chicken
1 bulb
1 carrot
1-2 bay leaves
boiling water
For the sauce:
200 g of young walnuts
3-4 cloves of garlic
1 bulb
1 tbsp hops-surely
1 tablespoon flour
1 tbsp apple or wine vinegar
1/2 teaspoon nutmeg
bunch of cilantro
frying oil
salt pepper
Preparation:
- Preparation of satsivi begins with chicken and broth. To make the meat tasty and tender, pour boiling water over it or immerse it in hot water. Thanks to this trick, it will boil less and retain juices. Boil the broth over medium heat so that it does not boil too much and turns out transparent. During cooking, remove the foam from the top, add the whole onion, and peeled carrots of medium size. A few minutes before the end of cooking, throw in a saucepan with broth 1-2 bay leaves. Cooking time depends on the amount of meat. The legs are cooked in about 40 minutes.
- While the chicken legs are cooking, prepare the sauce for the satsivi. Separately chop nuts and herbs. It is best to pass the nuts through a meat grinder. Cilantro can be finely chopped with a knife or also passed through a meat grinder. Here we send 3-4 cloves of garlic.
- Cut onions into small cubes and fry in oil until transparent. Add 1 tbsp. l of flour to thicken the sauce. Mix well. Here we pour 500-700 ml of chicken broth.
- Send chopped nuts, cilantro, and garlic to the pan. Add hops-surely, nutmeg, and apple cider vinegar. Salt and pepper to taste. Stir and bring the sauce to a boil.
- Transfer the chicken legs to a frying pan, bring to a boil together with the sauce, and set aside from the stove. Leave the dish to cool for about 8-12 hours. Satsivi is served cold, and nut sauce is soaked in pieces of fresh fragrant bread.
