Pumpkin, pear and pomegranate - a very interesting seasonal combination. Ukraine , ukrainegate , 7 November , 2021 _ Kitchen Australian pumpkin fantasy is based on the fruits of sweet varieties such as Fairytale, Jarrahdale and Delicata, but we can safely use "Acorn", "Harlequin", "Miracle" or "epic", just as delicate and sweet.
Ingredients for 4-6 servings: • 500 g of pumpkin • 3 glasses of pomegranate juice • 1 comp. cereals from mixed cereals • a sprig of fresh thyme • 1 bay leaf • 2 heads of lettuce frieze or leaf • 2 pears • 1/2 cl. red wine vinegar • 1 st. l. Dijon mustard • 1 shallot • 1 comp. rapeseed or linseed oil • 2 tbsp. l. olive oil • 2 tbsp. l. lemon juice • Salt, ground black pepper Boil the flakes for 3-5 minutes with a sprig of thyme and bay leaf. Drain the remaining water, remove the spices. Boil pomegranate juice in half in an enamel pan. Prepare the sauce: combine pomegranate syrup, vinegar, mustard, salt and shallots and beat in a blender on low speed. Add linseed oil and increase speed. Beat until smooth. In a separate bowl, mix the grains with the pomegranate sauce and let stand. Peel a squash, grate it and slice the pears into thin slices.
