According to the Mexican magazine Expansion Magazine, cinnabon was included in the list of 50 greatest pleasures in life. Later, chefs learned to cook amazing cinnamon buns at home. So do not deny yourself the pleasure, because in order to try cinnabon, you do not need to fly across the ocean.
Ingredients:
For the dough:
2 eggs;
600 g of wheat flour;
200 ml of milk;
100 g of sugar;
80 g of butter;
20 g of fresh yeast;
1/2 tsp salt.
For the filling:
150 g of cane sugar;
30 g of butter;
20 g of cream cheese;
20 g of cinnamon.
For cream glaze:
100 g of cream cheese;
100 g of powdered sugar;
40 g of butter;
2 tsp vanilla sugar.
Cooking time: 3.5 hours.
Step-by-step preparation:
1. In a large bowl, grind soft butter with sugar. Alternately add two eggs and mix well.
2. Pour fresh yeast with warm milk, stir and leave in the heat for 10 minutes so that they are completely dissolved and activated.
3. Pour the milk mixture into a bowl and mix well with the sugar-egg mass. Here we sift all the flour, add salt and knead the dough with your hands just in a bowl. Cover the finished dough with cling film. Make a hole so that carbon dioxide comes out. But leave in the heat for 40-60 minutes. During this time, the yeast will act and the dough will double in volume.
4. Roll out the dough and spread on a floured table, knead well with your hands for 10 minutes. Transfer the dough to a bowl, cover and set again for 60-90 minutes.
5. Spread the finished dough on a floured table and roll out. The thickness of the layer should be approximately 5 mm. In my case, the size of the rolled surface is 60×45 cm.
6. Grease the dough with softened butter and evenly distribute the surface of 20 g of cream cheese. Sprinkle with a mixture of cane sugar and cinnamon. Roll the dough into a roll. Cut the roll into 5 cm pieces.
7. The future buns are transferred to a form greased with oil or covered with parchment. Stack loosely, because the buns will fit and increase in volume. 12 buns are placed on a standard baking tray.
8. Cover the pan and put in a warm place for 30-40 minutes. Bake in a preheated oven to 180 ° C for 25 minutes.
9. Meanwhile, prepare the cream glaze. Grate butter, powdered sugar, vanilla sugar and cream cheese until smooth. Ready, still hot buns are generously greased with cream.
