For thousands of years, mankind has been tabooing certain combinations of ingredients, but now science has advanced far enough to easily explain how substances (and even products) actually interact – at the molecular level .

Some products are better served and eaten separately: and sometimes it’s not just in taste, but in food (read: chemical) incompatibility. However, many of these “dangerous” combinations are the fruit of superstitions that have been entrenched for centuries. Prejudices are also formed in the wake of the growing popularity of blogging and the quantitative increase in sources of information about healthy living – often inaccurate because it is completely unreliable. We tell in more detail where the truth is and where the lie is, and which combinations are better not to give to digestion for processing.
Milk and lemon
If you add lemon extract to warm milk, it will curdle quickly. The reason is hidden in casein – a protein that precipitates when the acid of lemon juice increases the acidity of milk. Because of this, it collapses. This process is slower if you add lemon to chilled milk. That is why we can enjoy such delicacies as lemon ice cream and lemon-cream cake.
Condensed milk itself is not particularly dangerous, unless it is a production defect. In addition, do not forget that milk is deliberately brought to such a state to make cheese and yogurt. And their consumption has long since reached mass levels.
Avoid or not
We advise you to avoid dishes with a combination of lemon and milk, if each of the products is of concern, or if the milk is curdled due to lack of production.
Mint and carbonated drinks
There is widespread information on the Internet that a mixture of mint and soda gives a lethal dose of cyanide. However, this is a completely unscientific argument, which is based rather on an attempt to explain the spectacular chemical reaction that occurs when mixing soda and mint.
The classic experiment with Coca-Cola and Mentos is her best illustration. And deaths from this “inflammatory” mixture have not yet occurred. The only thing you can fear is abdominal pain or (in the worst case) a gag reflex.
Avoid or not
This can cause discomfort, but does not require special contraindications. If you like the taste of mint in sparkling water, there are more than a dozen brands in stores that are ready to satisfy your taste. The easiest way to cook at home will be to get a jar of mint syrup.
Fruit with other products
There are many myths about this combination, but for the most part they boil down to the following idea: fruits are digested quickly, while other foods are much longer, and when left behind with leftovers, the fruit can just flirt. This theory is the basis of common practice: people start eating fruit only alone and only if they do not eat even a few hours after that.
Although sugar is broken down fairly quickly, fruit fiber, which is rich in fruit, requires a longer period of time and therefore slows down the process of sugar absorption into the blood (while controlling its normal concentration). A snack, for example, with yogurt and fruit will certainly slow down digestion, but in no way stop it. And the acidic environment of the stomach by its nature is the opposite of normal conditions for full fermentation. As you can see, the theory of incompatibility of fruit with other products is wrong.
Avoid or not
You should not do this: fruit will be a great addition to a good half of your favorite dishes. They go well with bread, protein and other fruits and vegetables in salads.
Dairy products and fish
Some peoples believe that combining fish with any dairy product increases the risk of vitiligo (skin pigmentation disorders). Now a little scientific information on this.
Vitiligo is the result of the mass death of cells responsible for the generation of melanin (although the causes of this process have not yet been fully studied by doctors). Immune system failure, severe sunburn or genetics – all this, but not a food factor, are considered possible causes of vitiligo, and the combination of milk and fish has not yet found any scientifically sound contraindications to consumption (for the development of vitiligo for sure) .
Avoid or not
Milk is part of many delicious fish dishes. Such a combination should be avoided only in case of individual intolerance.
