“When buying caviar, we focus on the price, we do not pursue cheapness,” she said.
As the expert explained, red caviar can be divided into two classes – from fish grown artificially (trout), and from wild fish (salmon or sockeye). The difference in price between the cheapest and most expensive caviar can be about 1000 hryvnias.
Yes, high-quality trout caviar will cost 1,400 per kilogram, or 112 hryvnias for an 80-gram jar. Pink salmon – 2000 hryvnias per kilogram (160 hryvnias per jar), and sockeye salmon – 2500 hryvnias per kilogram (200 hryvnias per jar).
“If the caviar is within these limits, then, by and large, this is normal. You shouldn’t buy a very cheap one, ”the expert said.
She added that it is important to pay attention to the shelf life of caviar given the spawning periods of salmon.
“Salmon spawn from July to September, and if the jar has a production date within that period, we understand that we have fresh caviar,” Kulikova explained.
She added that caviar made from frozen raw materials can also be of good quality. “There are a lot of companies that catch fish and immediately freeze it, and then make caviar from it,” said the expert.
Kulikova also called for avoiding caviar, which contains the preservative urotropin.
