Salads, soups, casseroles, desserts – this is just a small list of its uses in cooking. However, one of the disadvantages of freshly peeled potatoes is their rapid blackening. This is due to the fact that the starch comes into contact with air and oxidizes. The result is a not very appetizing spectacle, although the vegetable remains edible and non-toxic! However, this problem can be avoided by following simple tips.
How to prevent blackening of potatoes
So that the peeled tubers do not darken, just put them in a pan of cool water and leave there until use. As the surface of the vegetable will no longer come into contact with air, the oxidation process will stop. In addition, if you put the pan in the refrigerator, the potatoes will lie there without problems for 1 to 2 days.
If the tubers are cut, add a few drops of vinegar, lemon juice or a pinch of salt to the water. And when you start cooking, just drain the water and wipe dry with a clean cloth or paper towel. But do not leave the potatoes in acidic water for a long time, as it can change its texture and lose nutrients and vitamins.
Another tip is to wrap the potatoes in plastic wrap, making sure there is no air left inside.
Is it possible to freeze raw potatoes
Raw potatoes do not tolerate freezing, because under the influence of low temperatures it loses texture, taste and may even turn black. But if you still want to freeze peeled potatoes, you need to pre-blanch them.
As for unpeeled and raw potatoes, keep in mind that it can be stored for several months if it is in a dry, dark and ventilated place, but not in the refrigerator. It is desirable that the tubers do not lie too tightly, so that there is good air circulation. This method of storage is also a measure of prevention, because if one of them forms mold, it can lead to the rapid spread of mold to others.
What you need to know about storing peeled and sliced potatoes
As mentioned earlier, if the potatoes are peeled and / or sliced, simply put them in a bowl of cold water or wrap in plastic wrap. To prolong the shelf life, the tubers can be frozen, but this must be pre-blanched or cooked.
Ideally, choose potatoes with a dense softer, which can withstand thawing without losing texture.
To blanch the potatoes, dip the peeled tubers in boiling water for a few minutes. Then quickly remove and place in a bowl of ice water so that they stop cooking and retain their appearance. Then you can cut them into cubes, rings or slices, then place in a freezer bag and put in the freezer. Thus, potatoes can be stored for several months up to 1 year.
To freeze tubers in the form of french fries, it must first be boiled or fried in oil until golden brown (for a few minutes), then spread on a baking sheet lined with baking paper and put in the freezer for at least 6 hours. Then pour into freezer bags and store.
Mashed potatoes can also be frozen. Prepare it, cool and place in an airtight container. Just do not apply to the top, because when frozen, the puree swells a bit. Can be stored for up to 3 months.
Regardless of the method of freezing, thawing should be gradual and preferably in the refrigerator for 6-7 hours.
