Ingredients
for the base:
white chocolate – 200 g;
heavy cream 33-35% – 3 tbsp. l .;
poppy seeds – 40 g;
for lemon filling:
eggs – 2 pieces;
lemon – 2 pcs. (zest of 1 lemon + juice of 2 lemons);
sugar – 50 g;
corn starch – 1 tsp .;
softened butter – 80 g;
From this number of ingredients comes 6 candies in the form of a hemisphere with a diameter of 7 cm.
Preparation
- Remove the peel from one of the lemons, take only the yellow part, otherwise the cream may be bitter. Then squeeze the juice from both lemons.
- In a skillet or small saucepan put eggs and sugar, mix. You should not add a lot of sugar, because the base of the dessert is also quite sweet. Then add the zest and lemon juice and starch to the skillet. Put the cream on the stove and, stirring constantly, bring it to a boil, then cook a little thicker.
- In the finished cream add softened butter, mix well. If you do not like the pieces of zest in the cream and you want it to be homogeneous, pass the cream through a fine sieve. To prevent the finished cream from fading, cover it with cling film and leave to cool.
- While the cream cools, prepare the base for dessert. To do this, melt white chocolate with cream in a water bath until smooth. Then add the poppy seeds to the chocolate. You should get the consistency of soft plasticine.
- Spread 2/3 of the chocolate-poppy mass on the walls of the molds and put them in the freezer for literally 5-10 minutes.
- In molds where the chocolate has already set, spread the lemon cream and put everything back in the freezer. If you want to get a more liquid cream in the dessert, it will take 35 minutes, if more dense, close to ice cream, it will take about 1 hour.
- Fill the bottom of the cakes with chocolate mass, put them back in the freezer for 5-7 minutes and the original dessert is ready!
