Researchers have found that red meat can damage DNA. This conclusion indicates that red meat is a carcinogen.
The study was led by oncologist from the Dana-Farber Cancer Institute Marios Giannakis. He and his colleagues sequenced the DNA data of 900 patients with colorectal cancer. The analysis revealed a distinct mutation signature pattern that had never been detected before, but indicated a type of DNA damage called alkylation.
“Not all cells that contain these mutations will necessarily become malignant, and the signature was present in some samples of a healthy colon,” – said the scientist.
The sign of the mutation was largely related to the consumption of red meat, both processed and unprocessed, before the patient was diagnosed with cancer. The mutation is not related to the consumption of poultry, fish or other products.
“Red meat contains chemicals that can cause alkylation,” Giannakis said.
Further work may help physicians determine which patients are genetically predisposed to alkylation damage. They will then be advised to limit their consumption of red meat.
