Tiramisu is a classic Italian dessert that is loved all over the world. And I’m no exception. The dessert is very tender and airy thanks to the amazing cream based on mascarpone cheese. I decided to slightly improve the recipe for tiramisu cake by adding lemon zest to the cream. I assure you, so the dessert will be even more fragrant and delicious. Be sure to try!
By the way, tiramisu is not the only dessert that can be made using a ready-made base of dough or biscuits. Make a custard for Napoleon, grease the finished cakes bought in the supermarket, and wait a few hours until they soak.
Preparation time – 15 minutes.
Cooking time – 20 minutes.
Cooling time – 3 hours
Ingredients:
mascarpone – 500 g
coffee (ready) – 300 ml
rum (or cognac) – 50 g
cream (33%) – 500 ml
yolk – 8 pcs.
sugar – 8 tbsp. l.
Savoyard biscuit stick – 200 g
lemon (peel of one lemon) – 1 pc.
cocoa – 2 tbsp. l.
Preparation:
Make coffee, you should get about 300-400 ml of strong drink. Strain and pour into one container, leave to cool to room temperature. You can, of course, use soluble, but natural will be tastier.
Then add to coffee 50 g of rum or cognac, to your taste. If you want to get an even more delicate alcoholic taste, use Baileys liqueurs. To get an authentic taste of tiramisu, you will need marsala, but you can not find it in every supermarket.
Separate the yolks (8 pcs.) From the proteins and place in a fireproof bowl. We only need egg yolks to make tiramisu, and you can make a wonderful protein omelet for breakfast from proteins.
Add to the yolks 8 tbsp. l. sugar put on a steam bath, and beat with a whisk, heating the mass to 65 degrees. When the egg mixture becomes whiter and more homogeneous – it will mean that it has undergone the necessary heat treatment. Remove the mass from the steam bath and allow it to cool.
Pour cold cream (500 ml, 33% fat) into a bowl and beat with a mixer until firm peaks. Not all cream is whipped well enough, and it can happen that they do not whip at all. Therefore, always buy special cooking cream with maximum fat content and store it in the refrigerator before beating.
In a large bowl, combine the whipped cream, eggs with sugar, and mascarpone cheese (500 g). Stir very gently with a silicone spatula until the mass is homogeneous.
On a fine grater, grate the rind of one lemon and mix gently again. Remember that the thinner the layer of peel, the better. If you remove too thick a layer with a white layer, the peel will be bitter and spoil the taste of dessert.
Place a quarter of the cream on the bottom of a large baking dish.
Dip savoy cookies (200 g) in coffee with rum and place in a straight line on the cream. It is not necessary to keep it in coffee for a long time – one second is enough. Otherwise, your dessert will just “float”.
Cover the cookies with a layer of cream and then lay out the second layer of cookies. So fill the form with dessert with another layer. The last layer should be cream.
Put the container with dessert in the refrigerator for at least 3 hours, it should infuse, soak and thicken slightly.
Sprinkle with cocoa dessert (2 tbsp.) Before serving, but if you do not like the bitter taste of cocoa, you can skip this item.
