That’s when there was no bread at home, and to be lazy to go after it – I highly recommend making kefir cakes. But this is if there is kefir in the refrigerator. And it is better to buy homemade milk, make kefir from it (it will come out, you do not need to participate in it – just leave the milk for a few days without a refrigerator in a not too cool place). And be sure to cook kefir cakes with spices. The taste of the freshly fried cake is simply amazing – a crispy crust, a lush crumb that has a slight acidity due to the fermentation of milk. And if you sprinkle cakes with Bessarabian salt with spice mirudia – it’s almost a full lunch.
This is one of the first dishes that I remember very well. And one of the first dishes I cooked as a child – the recipe is extremely simple, so in half an hour you can already enjoy crispy cakes, instead of going to the store for bread. Laziness motivated me. These cakes are often tastier than plain bread, they can be both salty and sweet.
Ingredients:
3-3 1/4 cups wheat flour
1 egg
1 cup of kefir with a fat content of 2.5%
1 st. l. vegetable oil in the dough
1/2 teaspoon baking soda
2 pinches of salt
4-5 st. l. vegetable oil for frying cakes
Ingredients for serving:
1 st. l. spices spice
1/2 tsp. salt
sour cream for serving
Step 1
It is necessary to knead the dough of medium density – a little softer than dumplings. It is convenient to do it in a bowl – add all the ingredients to the sifted flour and start kneading the dough with a fork. When it becomes uncomfortable, mix with your hands. Gather the dough into a ball, cover with a towel or wrap in cling film and leave for 30-40 minutes without a refrigerator.
Step 2
Divide the dough into small pieces weighing about 60-80 grams, for convenience, this recipe is about 10 pieces. Worksurface or table, sprinkle with flour, and roll out each ball of dough about 5 mm thick. Rolled cakes can be stacked on top of each other, sprinkled with flour, and covered with a towel so as not to dry out.
Step 3
It is necessary to heat the oil in a frying pan over medium heat. After that, fry our cakes, pre-shaking the flour well. After all, it will burn and the 3rd cake will be fried in bitter dirty oil. Fried cakes are traditionally spread on a paper towel to remove excess fat. And while still hot – sprinkle with a mixture of spices mirudia with salt.
How to eat cakes?
The best option is to eat hot freshly fried cakes with cold sour cream or cold thick Bessarabian yogurt (yogurt).
The second option is to use cakes as a base for sandwiches. Not even sandwiches, but sandwiches. Cut the cake horizontally into 2 halves – top and bottom. From the fillings can be anything – from a spicy “flavor” with thin slices of lard and green onions to a combination of cheese with baked sweet peppers and herbs.
During frying, the cakes should rise at least 3-4 times, be sure to use a fork and pierce them in several places – so they are better fried and will not cause too large air bubbles.
However, I do not like them in the cold form, so if they have cooled, preheat in the oven or toaster – the cakes come to life again and they are almost indistinguishable from fresh.
