We have already prepared sour cream cupcakes with orange icing. This time I decided to make kefir dough – it turns out no less delicious. In general, there are an incredible number of recipes for cupcakes, they add raisins, bananas, cheese. Chocolate cupcakes with orange are also very popular, because the tart taste of chocolate goes well with orange sweetness.
The cupcake recipe I offer now differs in that I added orange peel and juice to the dough. The pastries are incredibly fragrant, and the structure of the cupcakes is very tender. If desired, I suggest sprinkling the finished cupcakes with powdered sugar. But you can make icing or sprinkle them with colorful icing sugar. I also really like pumpkin cupcakes – their paradox is that they are very popular even with those who do not eat pumpkin. Children especially like these cupcakes. So start experimenting with cupcakes.

flour – 360 g
baking powder – 10 g
eggs – 3 pcs.
sugar – 200 g
vanilla sugar – 10 g
kefir – 250 g
orange (peel and juice) – 1 pc.
salt – 1 pinch

In a bowl, combine 3 eggs with 200 g of sugar, a pinch of salt, and 10 g of vanilla sugar. Beat everything thoroughly with a whisk until completely combined.

Grate 1 orange peel into the dough. Make sure that the white part of the skin does not get together with the peel, it gives bitterness.
Squeeze the juice of half an orange into the dough and mix again. Orange peel will give the cake an incredible flavor, and the juice will make them less dense.
Add 360 g of flour with 10 g of baking powder and bring the mass to homogeneity with a whisk. It is necessary that no lumps remain in the dough.
Arrange the paper attachments, if any, in the cupcake tins. If you do not have them, then grease the forms with sunflower oil or butter for further easy removal of cupcakes from the forms. Fill the forms with dough no more than 2/3 of the volume, cupcakes rise well during baking. Bake in the oven at 180 degrees for 25 minutes. Check the readiness of the cupcakes with a wooden stick or toothpick, it should come out of the cake dry. Serve the cupcakes chilled. Sprinkle with powdered sugar if desired.
