Interestingly, there is no single recipe for khachapuri: in each region of Georgia, it is prepared in its own way. In some recipes, yeast dough is used, in others – dough based on fermented milk products, and recently people like to make khachapuri from puff pastry, which is started with cheese, boiled egg, and even potatoes.
Unleavened khachapuri is prepared on the traditional for the region sour milk drink mazoni, which in other countries is replaced by kefir. As a filling, you can use fresh cheeses – suluguni, cheese, or Adygea. To make the filling softer and tender, you can add sour milk cheese.
Ingredients:
1 egg
200 g of wheat flour
100 ml of kefir
1 st. l. oil
1/2 tsp. salt
1/2 tsp. sugar
1/3 tsp. soda
butter
For the filling:
200 g of cheese
1 egg
a bunch of dills
Step by step preparation:
- Mix kefir, egg, salt, sugar, and oil in a bowl. Add sifted flour and baking soda, knead the dough. Spread the dough on the table and continue to knead with your hands, adding flour. The dough should turn out soft and may stick to your hands a bit. Cover with a towel and leave for 10-15 minutes.
- Rub the cheese on a large grater, add a raw egg, and finely chopped dill. Mix well.
- Divide the dough into four parts. Roll out each piece with a rolling pin. Put a quarter of the filling in the center and pinch on top. Carefully press and once again roll out into a layer about 7 mm thick. So khachapuri will bake well, and the filling will be evenly distributed in the dough.
- Fry in a dry pan for 5-7 minutes on each side. To bake the dough, cover the pan with a lid. Ready, still hot khachapuri with cheese on top grease with butter.
