Roast chicken and mushrooms with red wine sauce is always a good idea for a romantic atmosphere. This dish is easy to cook, it takes a little time – about 45 minutes – and the result is almost guaranteed: it will be delicious, easy on the stomach, and quite effective.
Ingredients for two servings:
2 chicken breasts with skin
tsp. salt and ground pepper½
1 st. l. oil
300 g of mushrooms
1 st. l. butter
1 st. l. flour
1/2 st. chicken broth
1 st. dry red wine
1/2 tsp. sugar
Preparation:
Preheat the oven to 220 ° C. Rinse and cut the oyster mushrooms. Rub the breasts with salt and pepper to taste. Heat a frying pan over medium heat, add 1/2 tablespoon of oil, then the chicken – skin side down, and fry until golden – about 6 minutes. Then transfer to a baking sheet greased with the remaining oil, skin side up. Put mushrooms next to each other, sprinkle with water and bake in the oven for half an hour.
In the remaining pan, melt the butter, add the flour, and, stirring thoroughly, fry quickly. Pour in the chicken broth and bring to a boil, stirring constantly. Pour in the wine, sugar, and 1/4 teaspoon of salt and simmer until the sauce is reduced by half. Add salt and pepper to taste.
Pour a tablespoon of sauce on each plate, top with a piece of poultry and mushrooms, and do not forget to put a salad next to it.
