This bean is perfect as a side dish, but it can also be used to make incomparable vegan pate.

Bean. In fact, it is easy to cook delicious beans, but at the same time you must follow a few rules – because here, as in everything, important nuances.
Ingredients:
red beans – 200 g
onion – 2 pcs.
carrots – 1 pc.
garlic – 6 cloves
chili pepper – 1 pc. (if you, like me, like sharper)
tomatoes in their own juice – 800 g
royal mushrooms – 300 g
potato starch – 1 tbsp. spoon
cilantro and parsley – in a bunch
a little vegetable oil
Stage 1
It is necessary to wash, sort and soak the beans. In cold water. Preferably not from the tap, cleaned. Soak for a day in the refrigerator.
Stage 2
Slicing vegetables. You have no idea how slicing affects the taste. Of course, you can grate the carrots and chop the onion into large pieces. But believe me, it is better to spend 15-20 minutes on quality cutting. The result will be stunning.
Stage 3
Boil the beans. Because you have planned the cooking in advance and soaked the beans, they will cook fairly quickly – in 30 minutes. Sometimes, to make the beans cook faster, a pinch of baking soda is added to the water. But this is if you need to very quickly, for example, cook chickpeas for hummus. Although in this case it will be a little darker. I recommend just adding a bay leaf and half a bulb to the water. And do not salt the water!
Stage 4
We cook vegetables. Ideal in a cast iron cauldron or casserole. On low heat, fry garlic and chili oil in oil. Garlic should not turn golden, but only give the oil its aroma. And in the spring of garlic, as well as onions, you need to remove the core – the aroma will be more pleasant. Then add the onion and salt – so the onion will cook faster. After the onions put the carrots and sugar – so the carrots will give more juice and will also cook faster. After 15 minutes, add the mushrooms and simmer for another 10 minutes. You will end up with a very beautiful passerovka, which, incidentally, can be used as a basis for soup. But we cook beans, so we pour tomatoes in their own juice, crushing them a little with our hands. Try tomato sauce with vegetables, if you like – continue.
Stage 5
Starch must be diluted in cold water (about 150 ml will suffice). With a thin stream, enter this liquid into the boiling sauce, stirring constantly. Then add boiled beans, chopped greens and bring to a boil. If necessary – add salt.
And this dish can be served immediately. Cover with a lid, wrap in a towel. Beans should absorb the aroma of herbs and vegetables. Ideally serve in a few hours.
For me, this bean is perfect as a side dish to duck meat sausages (these are prepared by my Bulgarian friends from Bolgrad), well, or with cream mashed potatoes.
And the second dish – without adding tomatoes and herbs, beat the beans with vegetables in a blender. You will get a wonderful vegan pate, like Georgian lobio. Ideal to serve on a dried crispy baguette.
